Gotta Love Bacon (Recipes + an epic fail)

Hey y’all!

Let’s be real, I’m not big on eating beef and pork. HOWEVER, I love me some bacon. I haven’t cooked it and so I went to the store and picked some up. I just enjoy the crispy, fatty, yummy goodness of  bacon. I remember times when I was growing up when my grandparents would cook bacon that came in white butcher paper (so they must’ve gotten it from the butcher) and fry up some bacon in our various cast iron skillets. So anyway, I was feeling adventurous and decided to not only cook up some bacon, but to get creative with it. Since I’m trying to meal plan, I decided to make some egg muffins but wrap the bacon around the egg muffins (how yummy does that sound?) and I decided to make some candied bacon.

The first of my bacon recipes: Bacon Wrapped Baked Egg Muffins.

These treats are really yummy. They’re great for a breakfast on the go or maybe even a snack! This is definitely a high protein meal, which means it’s great for weight loss. I usually eat this after a workout as a way to get some protein in me instead of having a protein bar or a protein shake, which there is nothing wrong with those other options. This is just an extra little thing if you want to jazz up a meal or snack. You can also sprinkle some cheese on them if you really want to make it extra yummy!

For this you’ll need eggs and bacon. You can choose to use seasonings or not.
Spray muffin with oil
Place bacon in muffin tin in circular motion
Sprinkle paprika, pepper, and fresh (or dried) chives on the eggs (if you want to season your eggs) and bake at 350 degrees for 15 min
Remove and serve or allow to cool and place in a zip baggy for later.

The second bacon recipe: Candied bacon

I first had candied bacon several years ago as an appetizer at a restaurant. Some people may be like, candied bacon, what? but trust me, it’s delicious. It’s sweet. It’s salty. They make a great snack when you’re wanting something sweet and savory or you can def serve them up at parties as appetizers (obviously, you will need more than the small serving I made). One of my faves Ina Garten has a great recipe on her site. As a word of advice, if you’re going to walk away from your oven, please set a timer. I walked away and forgot about them and well…I ended up burning them (as you will see)!

Cut 3 pieces of bacon into 3 segments
For this you’ll need bacon (of course), brown sugar, and honey
Spoon 1 tsp of brown sugar over each segment
Drizzle some honey
Bake at in the oven at 350 degrees for 20 min and use a timer. I got sidetracked and lost track of time for mine! Don’t be like me and burn yours!
